A petty (Utility) knife is generally used for handing work like peeling fruits or vegetables, and can also be used as an all-purpose knife in compact kitchens.
Aritsugu Petty Carbon Steel knives are made of high-carbon steel containing around 0.9% carbon. The Carbon Steel knives can achieve an extremely sharp edge, and they are easier to sharpen than stainless steel. The steel used for these knives is not too hard and not too soft, to obtain the result of both sharpness and longevity. All the blades have been hand finished by skilled craftsmen.
Due to the nature of carbon steel, this knife will tarnish and form a patina. This is completely normal and no need to worry. The patina creates a protective barrier on the surface of the blade and helps protect it from rust.
